How to Select, Store, Clean
Select greens with fresh, crisp leaves. Avoid any that are wilted or sweaty.
Tip from a friend – store vegetables wrapped in paper towel in a zip lock bag. This method will trap out unwanted moisture and keep your vegetables fresher for longer!
Wash leafy greens in a water-filled sink, drain in sink, and repeat until the leaves are dirt-free.

Super Easy Spinach Stir-fry Recipe
1 tbsp Soy Sauce
1 tsp Chinkiang vinegar
1 tsp Seasame Oil
1/2 tsp freshly ground black pepper
1 bunch Spinach
1 tsp finely chopped garlic (or more if you prefer)
2 tsp finely chopped fresh ginger
Wash and trim the spinach, leaving most of the stalk. Roughly chop the spinach and stalk into about 100mm lengths. Heat the oil in a wok or fry pan add garlic and ginger and sauté lightly until fragrant (about 30 seconds). Add spinach and stir to lightly coat spinach with oil mixture over heat (about 5 seconds). Add the sauce, tossing continuously with the spoon until the spinach is just starting to wilt. Spoon out of the pan and serve immediately. The whole secret of this recipe is to be quick - you don’t want to overcook the spinach and the whole cooking process should be about one minute.
Delicious Raw Kale Salad
1 bunch kale, de stemmed, torn into pieces
1 tsp sea salt
1 tbsp. lemon juice
Wash Kale and massage with salt and lemon juice for five minutes or until leaves are tender. Add olive oil and massage a bit more. Eat and Enjoy!
Rocket and Pear Salad with Balsamic Vinaigrette
4 cups Rocket
1/4 cup red onion finely sliced
Tip: It your pears are not quite ripe pop them in the microwave for 10-15 seconds. This brings out the natural favours and makes them taste ‘tree ripened’
Place greens in a salad bowl. Then add a layer or thinly sliced red onion. Top with slices of fresh pear. Lightly dress.
Makes about 1 cup
3/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
Optional extras: spoonful of mustard, minced shallots, minced garlic, minced fresh herbs, teaspoon dried herbs, spoonful of honey or brown sugar
Mix all together, stir well.
